These ribs cook in 2 stages. First you apply a seasoning rub and bake them; then finish them on the grill, after they chill, with tangy-sweet sauce.

Ingredients
4 pounds country-style ribs (boneless)
1/4-1/2 cup apple-cider vinegar
1 tsp black pepper
1/2 tsp seasoned salt
1/2 tsp garlic powder
1/4 tsp dried crushed red pepper
2 green onions, chopped
1 tbsp vegetable oil
1 cup barbecue sauce
1/2 cup peach preserves
2 tbsp saved juice (see cooking instructions)
Instructions
Place ribs on two layers of heavy duy aluminum foil. Pour vinegar over ribs. Combine black pepper and next 3 ingredients; sprinkle over ribs. Seal foil packet tightly. Bake at 350 for 1 hour. Cool. Cover and chill ribs overnight (or just chill them for an hour).
Saute green onions in oil in a large skillet over medium-high heat until tender. Add barbecue sauce, preserves, and vinegar (juices from the first step); stir well. Simmer 1 minute; remove from heat.
Grill ribs, uncovered, over medium-hot coals (350 to 400 degrees) 20-30 minutes, basting heavily with barbecue sauce mixture the last 5 minutes. Serve ribs with remaining barbecue sauce mixture.
