Pumpkin Rolls

  1. Beat eggs for 5 minutes (need to be foamy). Add sugar, pumpkin, and lemon juice and mix together. Add dry ingredients. Line a jelly roll pan (cookie sheet with edges) with foil, grease and flour well. Pour mixture into pan, spread evenly and cook 10-15 minutes on 350. (You will know it is done when you touch it and it springs back). Remove from oven and turn onto a dish towel that has been generously sprinkled with powdered sugar. Roll dish towel and cake together. Let completely cool. Once cooled, unroll and frost. Then re-roll without the dish towel. Wrap in foil or plastic wrap and put in fridge to set up. They are always better if they have had several hours to set up.
