Jambalaya
This is a southern dish that is just a bit spicy and includes smoked sausage (yummy).

🥘 Ingredients
- 2 cups uncooked long-grain rice
- 1 lb smoked sausage, cut into 1/2-inch slices
- 1/2 pound cooked ham, chopped
- 1/2 cup vegetable oil
- 4 cloves garlic, minced
- 1 (28-ounce) can stewed tomatoes
- 1 teaspoon garlic salt
- 1/2 cup all-purpose flour
- 1 cup chopped celery
- 1 medium-size green pepper, chopped
- 1 bunch green onions, chopped & divided
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/4 tsp ground red pepper
📝 Instructions
- Cook rice according to package directions. Brown sausage and ham in a large skillet; drain well.
- Heat oil in a large Dutch oven. Add flour, and cook over medium-high heat, stirring constantly, until mixture turns copper colored (about 8 minutes). Stir in onion, celery, green pepper, half of green onions, and garlic.
- Cook over medium heat 15 minutes, stirring often. Add tomatoes and seasonings. Reduce heat, and simmer 5 minutes, stirring occasionally. Stir in meat and remaining green onions; cook until thoroughly heated. Add rice, and stir well.
