🥘 Ingredients

  • 1 lb shredded chicken/beef (or ground beef)
  • 1 tomato diced
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tsp cumin
  • 1 T oil
  • 1 can (4oz) green chilies
  • 1 1/2 tsp salt
  • 1 c monterey jack cheese, shredded

📝 Instructions

  1. Mix together tomatoes, onion, garlic, and cumin. Saute 3 minutes in 1 T oil. Add meat, chilies and salt. Reduce heat and simmer for 7 minutes.
  2. Put a spoonful of mixture in tortilla and sprinkle with cheese. Fold in ends and roll. Cook in 2 inches of oil.
  3. Ideas for toppings: sour cream, guacamole, salsa, olives, cheese.
